Steps to make Coleslaw:
- Cut cabbage into chunks and place in the food processor with the carrots and parsley and process lightly, making sure the cabbage doesn’t get mushy.
- In a separate bowl, mix the remaining ingredients together and allow to stand for a few minutes.
- Combine the mayonnaise mixture with the vegetables and toss. Chill for 1 hour.
Make coleslaw dressing: In a small mixing bowl whisk together the mayonnaise, apple cider vinegar and honey. If needed season with a bit of salt. Pour dressing over shredded cabbage mixture: Place shredded coleslaw mix in a large bowl then pour the dressing mixture over. Toss together: Toss to evenly coat.
